I love making these in the summer using zucchini from our garden. They make the perfect side to any meal or even for a healthy snack.
Baked Zucchini Fritters
Ingredients
- 5 cups shredded zucchini use only fresh zucchini for this recipe
- 1 cup shredded cheese of your choice
- 3/4 cup breadcrumbs
- 1 large egg
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 3/4 teaspoon salt
- Pepper to taste
Instructions
- Preheat your oven to 400 degrees.
- Line 2 large baking sheets with parchment paper and set aside.
- Add all the ingredients to a bowl and mix well.
- Portion out the mixture using an ice cream scoop or your hands so you have about 12 or 14 equally-sized fritters, and form them like a hamburger patty.
- Place the fritters on the prepared baking sheets and bake for about 20-25 minutes, or until the tops are golden brown and the fritters are cooked through.
- Remove from the baking sheet and serve immediately with a dollop of sour cream or tzatziki sauce. Enjoy:)
