Ingredients
- 1 cup of dry couscous
- 1-1/2 cups of water
- 1 tablespoon minced garlic
- ½ onion diced
- 1 bay leaf
- 2 tablespoons of olive oil
- salt to taste
- 1 tablespoon dried parsley
- Splash of lemon juice
Instructions
- In a small sauce pan heat one tablespoon of olive oil over medium to high heat.
- Add onion and cook until transparent, about 2-3 mins.
- Add garlic and cook about 1 minute.
- Add dry couscous and stir.
- Add salt, and stir.
- Add the water and bay leaf.
- Bring to a boil then reduce to a slow simmer
- Cover and let it simmer until all the water has been absorbed (about 10 mins).
- After all liquid has been absorbed, remove the bay leaf and discard.
- Add remaining tablespoon of olive oil, the parsley and the lemon.
- Stir to combine.
- Serve and enjoy!
