This is my mother-in-law’s recipe. It is so delicious. It takes a little time to put it together but it is definitely worth it. Serve with pita bread to complete this great meal.
Lentils and Rice aka Mujadara

Ingredients
- 4 tablespoons olive oil
- 4 medium onions, diced
- 3 1⁄2 cups water
- 1 cup of lentils
- 1 cup of rice
- 1 teaspoon of salt
Instructions
- Heat olive oil in a skillet, saute the onions until caramelized.
- In the meantime, bring water to a boil in a saucepan, add the lentils, reduce heat, and cover, simmering for 15 minutes.
- To the lentils, add the rice, and salt,.
- Cover and simmer 15 minutes or until rice is tender.
- Remove from heat and stir in the caramelized onions.
- Cover and let stand for 5-10 minutes
- Serve and enjoy!
