I made this for Easter this year to go with our traditional ham instead of mashed potatoes. The potatoes were creamy and full of flavor and had just the right amount of cheesiness without being overpowering. Neitherless to say there were no leftovers.
Baked Mashed Potatoes with Parmesan

Ingredients
- 4lbs yellow potatoes and peeled and cubed
- ½ cup unsalted butter, cut into 4 pieces
- 1 tablespoon minced garlic
- 1 cup whole milk
- 1 cup freshly grated parmesan cheese
- 1-1/2 cups freshly grated mozzarella cheese
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees
- Grease a 13 x 9-inch baking dish.
- Place the potatoes in a pot and cover with water.
- Bring potatoes to a boil over medium to high heat, then reduce to medium and simmer until tender about 15 to 20 minutes..
- Meanwhile, in a small saucepan, melt butter over medium heat.
- Add garlic and saute 30 to 60 seconds and set aside.
- Drain potatoes, return to pot and mash well.
- Add the butter mixture to potatoes along with milk, mozzarella, ¾ cups parmesan cheese.
- Mix and add salt and pepper to taste.
- Pour mixture into the prepared baking dish, spread into an even layer.
- Sprinkle remaining ¼ cup parmesan over the top.
- Bake for 20 minutes, to brown the top broil for 2 to 3 minutes.
