On New Year’s Day, I always like to make a nice meal to celebrate the day without being in the kitchen all day this was the perfect meal. The roast was so tender, the carrots perfectly cooked and, the spice combination was wonderful. My family really enjoyed this simple/fast flavorful meal to start the New Year.
Instant Pot-Roast Pork

Ingredients
- 2 pounds pork loin roast
- Salt to taste
- Pepper to taste
- 2 Tablespoons butter
- ½ medium onion, diced
- 4 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- ½ cup broth or apple juice ( I used apple juice)
- 2 Tablespoons Worcestershire sauce
- 1 Tablespoon brown sugar
- 1Teaspoon yellow mustard
- 1 Teaspoon each of dried rosemary, basil, oregano, and thyme
- 1 Tablespoon cornstarch
- ¼ cup water
Instructions
- Season pork with salt and pepper.
- Turn Instant Pot on Saute and add butter and melt.
- Add the pork loin and sear the sides to a nice golden brown.
- Add the onions and garlic and cook until soft about 2 minutes.
- Stir in the carrots, celery, broth or apple juice, Worcestershire sauce, brown sugar, mustard, and herbs.
- Place lid on Instant Pot and sent vent to the sealed position.
- Using the manual setting, select 15 minutes cook time.
- Once cooking time is complete, cancel and quick release pressure.
- Remove the pork loin from the Instant Pot, cover and allow the pork loin to rest for about 15 minutes.
- Mix together the cornstarch and water.
- Add to the Instant Pot with the juices.
- Turn Instant Pot on Saute and simmer until thickened.
- Server and Enjoy.
