Sweet Potato Snickerdoodle Cookies

Ingredients
- 1-1/2 cups all-purpose flour
- ½ cup unsalted butter, softened
- ½ cup white granulated sugar
- ½ cup brown sugar, packed
- ¾ cup sweet potato puree ( 1 medium potato)
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ***For the Topping***
- ½ cup white granulated sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 375 degrees.
- Line 2 cookie sheets with parchment paper (for easy clean up)
- In a large mixing bowl, cream together the butter and sugars until light and fluffy.
- Add sweet potato puree and mix until incorporated and smooth.
- Add the cinnamon, nutmeg, salt, baking soda, and vanilla and mix to combine.
- Add the flour and mix until just combined.
- Refrigerate dough for two to three hours until firm.
- Combine the sugar and cinnamon in a small bowl.
- Roll dough into 1 to 2 inch balls and roll the dough in the cinnamon sugar mixture until completely covered.
- Place on cookie sheet and repeat with the remaining dough
- Bake cookies for 10 to 12 minutes.
- Let cool slightly and remove to wire rack to cool completely.
