Bacon what can I say it makes everything better. I make this a couple times a year only because it is so rich. It is a popular request for birthday dinners. I hope you enjoy it.
Bacon Wrapped Meatloaf

Ingredients
- 1 cup whole milk
- 6 slices white bread
- 2 pounds ground beef
- 1 cup freshly grated Parmesan cheese
- ¼ teaspoon seasoned salt
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon dried parsley
- 4 eggs, beaten
- 10 slices bacon
- For the Sauce:
- 1-1/2 cups ketchup
- ⅓ cup brown sugar
- 1 teaspoon dry mustard
Instructions
- Preheat oven to 350 degrees.
- Line the bottom of a broiler pan with foil and lightly spray the grate with non-stick cooking spray.
- Pour milk over the bread slices and soak for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in an electric mixing bowl and pour in beaten eggs.
- Beat mixture on low to medium until well combined.
- Form the mixture into a loaf shape and place on broiler pan.
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce:
- Add ketchup, brown sugar, mustard in a mixing bowl.
- Stir together.
- Pour ⅓ of the mixture over the top of the bacon and spread with a spoon.
- Bake for 45 minutes, then pour another ⅓ of the sauce over the top.
- Bake for 15 minutes more.
- Let it rest for about 10-15 minutes.
- Slice and serve with remaining sauce.
