I made this yesterday for my husband’s birthday. It was quite delicious and the almond extract in the frosting added a unique flavor to the frosting. My family really enjoyed this cake.
Yellow Sheet Cake with Chocolate Frosting
Ingredients
- For the Cake:
- 3/4 cup butter room temperature
- 1-1/2 cups sugar
- 4 large eggs
- 3 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup whole buttermilk
- For the Chocolate Frosting:
- 3/4 cup butter room temperature
- 2-1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder I used dark chocolate powder Hubby loves dark chocolate
- 5 tablespoons whole buttermilk
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
Instructions
- Preheat oven to 350 degrees.
- Grease a 9 x13 inch baking pan and set aside.
- In a mixing bowl beat butter and sugar on low until creamy.
- Add eggs one at a time
- Continue to beat on low until all the eggs are incorporated into the batter.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In a measuring cup, measure out buttermilk.
- Add dry ingredients to the batter and alternate with buttermilk.
- When all ingredients have been mixed, add the vanilla and mix until completely incorporated.
- Pour batter into the prepared pan and evenly smooth with a spatula.
- Bake for 26 to 28 minutes or until done.
- Let cake cool after baking
- For the Frosting:
- In a mixing bowl beat the butter on low.
- In a small bowl sift together the powdered sugar and cocoa.
- Gradually add to the butter while beating on low until combined.
- Beat in the buttermilk and extracts until combined.
- Spread frosting over cooled cake and serve.
