My daughter had some canned pumpkin left over from another recipe. She found this recipe to use the rest of the pumpkin. It was delicious. She is becoming quite the baker.
Pumpkin Bread
Ingredients
- 1-/2/3 cups flour
- 1-1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 cup canned pumpkin
- 1/2 cup canola oil
- 1/2 cup water
- 1/2 cup chopped walnuts
- 1/2 cup raisins optional
Instructions
- Preheat oven to 350 degrees.
- Grease a 9 x 5 inch loaf pan.
- Beat together eggs, pumpkin, oil and water.
- Add flour, sugar, baking soda, cinnamon, salt, baking powder, nutmeg and cloves.
- Mix just until moistened.
- Fold in walnuts and raisins.
- Pour into prepared pan and bake for 65 to 70 minutes or until done.
- Cool in pan for 10 minutes, then remove and cool completely on a wire rack.
