I had some ripe bananas , left over canned pumpkin and a little buttermilk. I made this recipe it was quite good. I never like to throw food away. I love it when I can combine left over food to create something good to eat.
Pumpkin Banana Bread
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 3/4 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 2 very ripe bananas
- 3/4 cup canned pumpkin
- 1/4 buttermilk
- 2 large eggs beaten lightly
- 6 tablespoons unsalted butter melted and cooled
- 1-1/2 teaspoons vanilla
Instructions
- Preheat oven to 350 degrees.
- Grease a 9 x 5 inch loaf pan.
- In a mixing bowl, beat the bananas, pumpkin, buttermilk, eggs,melted butter and vanilla.
- Add the flour, sugar, baking soda, and pumpkin pie spice,
- Mix just until combined.
- Pour into prepared pan.
- Bake for 55 minutes or until done.
- Allow to cool for 10 minutes then completely cool on a wire rack
