I had a taste for something coconut ,so I made this bread for Easter morning. I served it will hard boiled eggs and fresh fruit. The family really enjoyed it.
Pineapple Coconut Bread
Ingredients
- 1-3/4 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup butter softened
- 3/4 cup brown sugar
- 1 egg
- 1 8 ounce can crushed pineapple, undrained
- 1/2 cup coconut
- 1/4 cup mini chocolate chips
Instructions
- Preheat oven to 350°
- Greased a 9 inch loaf pan.
- Cream together butter and sugar until smooth.
- Add egg and mix.
- Combine flour, baking powder, baking soda, and salt.
- Add flour mixture to butter mixture and mix until blended.
- Add coconut and chocolate chips and mix.
- Pour in to prepared pan and bake for 50 to 60 minutes or until done.
- Enjoy.
