There is nothing like warm gingerbread out of the oven on a cold winter day. This is a family favorite topped with whipped cream.
Gingerbread
Ingredients
- 1 cup white sugar
- 1/4 teaspoon salt
- 1 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/2 tsp powdered cloves
- 1 cup vegetable oil
- 1 cup light molasses
- 2 teaspoons baking soda
- 1 cup boiling water
- 2-1/2 cups all purpose flour
- 2 eggs well beaten
Instructions
- Preheat oven to 350°
- Grease a 9 x 13 baking pan.
- Mix the sugar, salt, ginger, cinnamon and cloves together in a bowl.
- Add the vegetable oil and the molasses, stirring until well blended.
- Mix the baking soda into the boiling water and immediately stir into the mixture.
- Add the flour gradually, mixing well after each addition.
- Mix in the beaten eggs.
- Pour into greased pan and bake for 40 minutes.
