This bread has a wonderful lemon flavor. It is the perfect combination with the squash.
Lemon Summer Squash Bread
Ingredients
- 1 cup melted butter
- 2 cups sugar
- 1/4 cup plus 2 tablespoons lemon juice
- 3 eggs
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2-1/2 cups shredded yellow squash can use zucchini
- Lemon Glaze
- 1 tablespoon butter
- 3 teaspoons lemon juice
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°
- Prepare two loaf pans with baking spray
- Mix together melted butter and sugar.
- Add lemon juice and eggs and mix.
- Combine, flour, salt, baking soda and baking powder and mix.
- Add flour mixture to liquid mixture and mix just until combine.
- Add squash and mix.
- Pour into prepared pans and cook for 1 hour.
- Lemon Glaze
- Add 1 tablespoon butter to a small pan and melt.
- Remove pan from the heat and add the 3 teaspoons of lemon juice. Whisk to combine.
- Add the powdered sugar and whisk to combine.
- Add if needed water to thin to right consistency.
Notes
I had to only cook the breads for 50 minutes. So cooking time can vary. This bread is great. It is more like a cake.
