This is a great recipe for veggies especially using veggies from your garden.
Marinated Grilled Vegetables
Ingredients
- Marinade Ingredients:
- 1 cup Soy Sauce
- 1/4 cup Balsamic Vinegar
- 1 tablespoon Honey
- 2 tablespoons Olive Oil
- 1 tablespoon dried Thyme
- 1 teaspoon Black Pepper
- Recommended Vegetables:
- Peppers
- Onions
- Zucchini
- Yellow Squash
Instructions
- Cut vegetables into 1-2 inches squared pieces.
- Transfer the cut vegetables into a large ziplock bag.
- Whisk all of the marinade ingredients together in a bowl and pour into the bag.
- Marinade the vegetables at least 30-45 minutes or up to a few hours.
- After marinaded, pour the marinade into a bowl to brush onto the vegetables during grilling.
- Remove vegetables from the bag and place the pieces on the skewer. Mix the vegetables to create a pleasing mixture of colors and flavors.
- Place the vegetables on the grill brush with marinade and grill on one side for about 5 minutes.
- Turn and brush other side with marinade and cook for another 4-5 minutes or until the vegetables are cooked.
Notes
I do not brush the vegetables with additional marinade and they test just as good.
