This is a family favorite and a nice dish to have on a hot summer day.
Carrot and Raisin Salad With Pineapple
- 2/3 cup raisins
- 2 cups coarsely grated carrots
- 1 cup crushed pineapple drained
- 1/3 cup mayonnaise
- 1 tablespoon lemon juice
- 1/4 salt
- 1 tablespoons sugar optional
- Toss raisins, carrots and pineapple together lightly; set aside.
- Stir together mayonnaise, lemon juice salt and sugar (if using) and add to the raisin mixture.
- Refrigerate until served.
