Healthy Spinach Artichoke Dip is a delicious and nutritious appetizer made with spinach, canned artichoke hearts, low-fat mayonnaise, avocado, and spices. Healthy Spinach Artichoke Dip
Ingredients
- 10- ounce package of frozen spinach defrosted and drained
- 14- ounce can quartered artichoke hearts chopped
- 2 tablespoons minced garlic
- ½ avocado
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ½ teaspoon onion powder
- Ground pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Spray a 2qt casserole dish with non-stick cooking spray and set aside.
- Squeeze spinach using a cloth to remove as much excess water as possible.
- Mix the spinach, chopped artichoke hearts, and garlic in a large mixing bowl.
- In another medium mixing bowl, mash the avocado. Add the mayo, lemon juice, salt, onion powder, and pepper, and stir until combined.
- Add this mayo/avocado mixture into the large bowl with the rest of the ingredients. Stir until everything is well combined.
- Then pour it into the prepared casserole dish.
- Bake at 350 degrees for about 20 minutes, until everything is hot.
