When I make a roaster chicken I like to use the whole chicken and let nothing go to waste. This is an easy way to make broth from the carcass. Just add it to the Instant pot along with some ingredients and you have a recipe for delicious broth.

Ingredients
- 1 Chicken Carcass
- 4 leaves celery
- 2 garlic cloves
- 8 to 10 cups of water
Instructions
- Place the trivet into the Instant Pot.
- Place the leftover chicken carcasses onto the trivet.
- Add the celery leaves and the peeled cloves of garlic.
- Add the water.
- Place the lid on and set it to venting.
- Pressure cook on high for 1 hour.
- Do a quick release after the hour is up and once the pin drops, remove the lid.
- Remove the carcass and separate the leftover meat.
- Remove the celery and garlic and strain the chicken stock.
- Use to make soup or pour into containers to refrigerate or freeze
