Homemade Garden Fresh Marinara Sauce

Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion
- 2 tablespoons minced garlic
- 8 cups chunked tomatoes
- ½ teaspoon Italian seasoning
- ½ teaspoon oregano
- Dash of dried rosemary
- ½ dried basil
- 1 teaspoon dried parsley
- 1 tablespoon brown sugar
- ½ teaspoon salt
- 6-ounce can of tomato paste
Instructions
- Add olive oil to a large saucepan over medium heat.
- Add onions and cook until translucent.
- Add garlic and cook for one minute, stirring constantly.
- Add chunked tomatoes (peel included) and a pinch of salt and stir.
- Add Italian seasoning, oregano, and rosemary.
- Reduce heat to low and cover for 15 minutes.
- Covering the pot will allow the tomatoes to break down quicker.
- After 15 minutes, uncover and cook over low heat for about an hour stirring occasionally.
- Use an immersion blender to puree the sauce.
- Add the parsley and basil and blend with the immersion blender.
- Add the salt, brown sugar, and tomato paste and stir to blend.
- Continue to simmer for another 30 minutes to thicken.
- Serve and enjoy:)
Notes
The sauce can also be frozen for future use. It freezes nicely
