I wanted a change from mashed potatoes so I made these for Christmas this year to go with a pot roast and oven roasted Brussel sprouts it was amazing and the family said it was a keeper.
Cheesy Scalloped Sweet Potatoes

Ingredients
- 2 lbs sweet potatoes, peeled and thinly sliced
- 1½ cups milk
- 1½ teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon nutmeg
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat oven to 375 degrees.
- Grease a 2 quart baking dish with non-stick cooking spray and set aside.
- In a small bowl, whisk together milk, garlic powder, thyme, salt, pepper, and nutmeg.
- Place a layer of sweet potato in the bottom of the dish.
- Pour a scant ¼ cup of milk over the top.
- Repeat with remaining sweet potatoes and milk mixture, ending with the milk mixture.
- Cover with foil and cook for 30 minutes.
- Remove foil and cook for an additional 30-35 minutes or until potatoes are fork-tender and just starting to turn golden brown.
- Top with shredded cheese and cook for an additional 10 minutes or until cheese browns and mixture is bubbling.
- Remove to a wire rack to cool for a few minutes before serving.
