This jam is so easy to make and makes the whole house smell so good! The best thing about this jam besides its taste, it is lower in sugar and you don’t even notice the difference in taste.
Easy Peach Jam
Ingredients
- 4 cups fresh peaches pureed
- 2 cups white sugar
- 3 tablespoons lemon juice
- 1 package fruit pectin optional
- Instant pot for processing bath
Instructions
- Prepare an instant pot for processing, and set aside.
- Peel the peaches and remove the pits.
- Put peach halves into a food processor and process until smooth.
- In a large saucepan pour the peach puree, one tablespoon lemon juice, pectin (if using), and whisk until pectin is dissolved. If you do not use pectin, you need to boil until it thickens a little.
- Bring to a boil over high heat and stir frequently.
- Add all of the sugar at once, stir continuously and bring to a full, rolling boil.
- Boil and stir for 1 minute and add the remaining 2 tablespoons of lemon juice and remove from heat.
- Skim off foam and discard.
- Ladle hot jam into hot jars and leave 1/4" headspace.
- Remove air bubbles and adjust headspace by adding more hot jam as needed.
- Wipe the rim with a clean cloth and center the lid on the jar.
- Place in the prepared instant pot.
- To Process:
- Put a penny in the bottom of the instant pot.
- Put the trivet in and add enough water to the top of the trivet.
- Add a splash of vinegar.
- Set vent to VENTING NOT SEAL
- Press steam and when the valve comes up, set a timer for 15 minutes.
- When the time is up, shut off and wait for the valve to go down before opening.
- Remove jars carefully and place them a towel to cool for 24 hours.
Notes
You do not have and an instant pot or do not want to use one to process you can;
Fill a large pot with water add the jar and make sure the jars are covered completely with water and bring to a full boil and process for 10 to 15 minutes. With Jam jars you only need to process for 10 minutes but I prefer to process for 15 minutes.
