An easy and delicious way to prepare chicken soup in a few minutes. I make this at least once a week. Who does not love chicken soup on a cold winter day or when you are not feeling well.
Instant Pot Chicken Soup
Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion chopped
- 2 medium carrots peeled and chopped
- 2 celery stalks chopped
- 1 tablespoon minced garlic
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 boneless skinless chicken breast
- Salt and pepper
- 4 cups chicken broth
- 4 cups water
- 8 oz pasta of choice
Instructions
- Turn Instant Pot to saute setting.
- Heat oil, then add onion, carrots, and celery.
- Cook, stirring occasionally, until vegetables are slightly tender, about 5 to 8 minutes.
- Add garlic and thyme and cook until fragrant, about 1 minute.
- Add bay leaves, then add chicken breasts and season generously with salt and pepper.
- Add broth and water, close lid and set the vent to the sealed position.
- Set Instant Pot to soup setting and set the timer for 7 minutes.
- When cooking is complete and allow air to release naturally for 10 minutes, and then quick release.
- Careful remove chicken from Instant Pot and shred chicken using two forks.
- Return chicken to the pot and remove bay leaves.
- Add pasta and select saute setting and cook, uncovered for 4 to 6 minutes or until pasta is cooked,
- Turn off Instant Pot and serve.
- Enjoy.
