What a nice change from traditional casseroles. The added pineapple and brown sugar give it the right amount of sweetness without going overboard.
Pineapple Chicken Rice Casserole
Ingredients
- 1/2 cup brown sugar could use less
- 1/2 cup soy sauce
- 2 teaspoons minced garlic
- 3/4 cup chicken broth
- 1-1/2 cups uncooked instant brown rice can use white
- 1/2 cup diced onion
- 1/2 cup carrots cut Julienne can also shred
- 1 20 ounce can pineapple chunks in juice not drained
- 1 lb thin chicken breasts cut into bite-sized pieces
Instructions
- Preheat oven to 425 degrees.
- Spray a 9 x 13-inch baking dish.
- In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
- Add uncooked rice, onion, carrots, pineapple with juice, and chicken.
- Pour into prepared pan, and cover with foil.
- Bake for 20 minutes.
- Once cooking is done, uncover and stir ingredients.
- Cook uncovered for an additional 10 minutes, or until chicken is cooked through and the rice is tender.
- Let stand 5 to 10 minutes before serving.
