Ingredients
- 2 eggs
- 1-1/4 cups of milk
- ⅓ cup of canola oil
- 2 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 2 cups of flour
- 1 cup quick oats
- ¾ cups of sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon of salt
- 1 cup of blueberries (fresh or frozen)
Instructions
- Preheat oven to 350 degrees.
- Grease a loaf pan.
- Beat eggs.
- Add milk, oil, vanilla, and lemon juice, mix well.
- Combine the flour, oats, sugar, baking powder, baking soda, and salt.
- Add to wet ingredients, mixing just until moistened.
- Gently fold in blueberries.
- Pour into prepared loaf pan.
- Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
