I have made this using leftover turkey from Thanksgiving and I have also made it with left over ham from Easter. But ways are quite delicious.
Creamy Turkey Shepard's Pie

Ingredients
- 3 tablespoons butter
- ½ small onion, finely chopped
- 2 large carrots, finely diced
- 1 stalk celery, finely diced
- ½ teaspoon minced garlic ( I used 1 tablespoon --love garlic)
- 1 tablespoon all-purpose flour
- 1-1/2 cups chicken broth
- 1 cup frozen peas
- 2 cups cooked, chopped turkey (or ham)
- Salt and pepper to taste
- ½ teaspoon dried thyme( did not use with ham)
- 3 cups mashed potatoes
Instructions
- Heat oven to 375 degrees.
- In a medium oven-safe skillet, melt 1 tablespoon of butter over medium-high heat.
- Add the onion, carrots, and, celery and cook until tender.
- Add garlic and cook for 1 minute.
- Add one more tablespoon butter to cooked vegetables.
- Add the flour and stir until completely combined.
- Add the broth, cook and stir until broth is thickened.
- Stir in peas and turkey (or ham) cook until warmed through.
- Season with salt and pepper to taste, and add thyme.
- Top with mashed potatoes and dab with remaining butter.
- Bake for 20 minutes, or until potatoes are heated through.
