This Christmas my husband gave me an Instant Pot and I absolutely love it. It saves me so much time and there is less clean up. The chicken is so incredibly moist, tender, and best of all it cooks in 5 minutes I use the chicken for main dishes, chicken salad, and regular salads.
Instant Pot Chicken Breasts
Ingredients
- 1 tablespoon olive oil
- 3 boneless chicken breast
- 1/4 teaspoon garlic salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon dried oregano
- 1/8 teaspoon dried basil
- 1 cup water
- Gravy--Optional:
- 1 tablespoon butter
- 1 ½ tablespoons cornstarch
- 1 ½ tablespoons water
Instructions
- Preheat Instant Pot on saute on the highest setting and add oil to the pot.
- Pat the chicken breasts dry with paper towels.
- Rub the seasoning mixture over all sides of the chicken.
- Once hot, add the chicken breasts to the pot and brown on both sides.
- Remove chicken to a clean plate. Turn off the sauté function.
- Add 1 cup of water to the pot, plus the trivet.
- Place the chicken on the trivet.
- Lock the lid, and cook on manual high for 5 minutes.
- Allow the chicken to naturally release for 5 minutes, and then release the rest.
- Remove the chicken from the pot, and allow it to rest for 5 minutes.
- Serve and enjoy:)
- To Make Gravy--Optional:
- tablespoon butter
- ½ tablespoons cornstarch
- ½ tablespoons water
- Remove trivet from pot. If desired, pour the liquid from the pot through a strainer to strain out any solids and then return the liquid to the pot.
- Turn on sauté. Add the butter to the broth in the pot.
- In a small bowl, stir together the 1 ½ tablespoons each of cornstarch and water.
- Stir this cornstarch slurry into the liquid in the pot.
- Bring to a boil and cook at a simmer, stirring occasionally, until the gravy thickens.
- Remove from the heat (take the inner pot out of the base), season to taste with salt and pepper, and serve.
Notes
When using 2 chicken breast cook for only 4 minutes and rest for 4 minutes.
