My daughter made this yesterday for dinner and it was delicious. She is enjoying learning to make the food she enjoyed.
Shepard's Pie
Ingredients
- 2 tablespoons olive oil
- 1 medium onion diced
- 1 pound ground beef or lamb
- 3 tablespoons Worcestershire sauce
- 3 medium to large carrots peeled and diced
- 1/2 cup green peas
- 1 teaspoon dried oregano
- A dash of rosemary
- 1/2 cup beef broth
- Salt and pepper to taste
- Mashed Potatoes:
- 2-1/2 pounds potatoes chopped
- 2 ounces unsalted butter
- 2 tablespoons milk
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees.
- In a large sauce pan over medium-high heat add the olive oil and onions, cook until softened.
- Add the ground meat season with salt and pepper and cook until browned.
- Stir in the Worcestershire sauce, carrots, peas, oregano, rosemary, salt, and pepper.
- Cook until carrots are slightly softened.
- Add the beef broth and bring to a simmer.
- Transfer to an 8x8 baking dish set aside.
- For the Mashed Potatoes: Add the potatoes to a large pot of water, bring to a boil and cook until they are soft, about 15 minutes.
- Strain the potatoes and mash with the milk, olive oil, salt, and pepper.
- Spread the potatoes over the meat and vegetable mixture.
- Cook for 40 minutes or until the mashed potatoes turn a light brown and meat mixture is bubbling.
