I made this using leftover ham and hard boiled eggs from Easter. A yummy way to use leftovers.
Ham Salad Sandwich
Recipe type: Lunch
- 2 cups leftover ham, chopped
- 1 cup finely minced onion
- 1 teaspoon Dijon mustard
- 2 hard-boiled eggs, diced
- ¼ cup sweet pickle relish, drained
- ½ cup mayonnaise
- Mix all the ingredients until well blended.
- Spread on bread of choice and enjoy.
