Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- ½ teaspoon salt
- 3 teaspoons ground cinnamon
- ½ teaspoon nutmeg
- 4 eggs
- 1-1/4 cups oil
- 1 cup sugar
- 1 cup packed brown sugar
- 2 teaspoons vanilla
- 3 cups grated carrots(Choose largest setting on grater) I did 2 cups finely grated
- 1 cup raisins
- 1 cup nuts (optional)
- Cream Cheese Frosting
- 8 ounces cream cheese, softened
- ½ cup butter, softened
- 2 cups confectioners' sugar, sifted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°
- Prepare to 9 inch pans or one 9 x 13 sheet pan by lining with parchment or wax paper.
- Mix together in a bowl, flour, baking soda, baking powder, salt, cinnamon & nutmeg.
- In a mixing bowl, beat together, eggs, oil, sugars and vanilla for about a minute.
- Add the dry ingredients to the wet mixture and mix for about 2 minutes.
- Add the grated carrots.
- Then add raisins and nuts (if using).
- Pour batter in prepared cake pans.
- Baked for 45 to 50 minutes or until done.
- Frosting:
- Cream butter and cream cheese until smooth.
- Add confectioner sugar and vanilla and beat until smooth.
- Frost cake.
