As a child I loved my mother and grandmother’s Irish Bread. They never had a written recipe, so I could never quite get it right, until now. This taste just like the bread I grew up on. I hope you enjoy it as much as I do!
Irish Soda Bread
Ingredients
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 1/4 cup brown sugar packed
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup raisins
- 2 cups butter milk
- 4 tablespoons melted butter
- 1 egg lightly beaten
Instructions
- Preheat oven to 350°
- Sift the flours, brown sugar, baking powder, baking soda and salt into a large mixing bowl. Stir in the raisins.
- In a small bowl, whisk the buttermilk, butter and egg.
- Pour the wet ingredients into the large bowl with the dry ingredients.
- Stir everything with a spatula or wooden spoon until the dough resembles a wet and sticky but evenly mixed dough.
- Generously grease a 9 x 5 loaf pan.
- Scraping down the large bowl, transfer the dough into the loaf pan.
- Bake for 60 minutes until the bread is a nice and golden brown. The loaf should be firm to the touch.
- Allow the bread to rest for 10 minutes before removing from its pan.
- Allow the bread to cool down to room temperature or serve warm.
